Buffalo Chicken Jalapeño Poppers

Makes 38 large jalapeno halves

1/2 cup Buffalo wing sauce
20 jalapenos, deseeded and sliced lengthwise
1/2 cup bleu cheese dressing
8 ounces cream cheese, softened
1 1/2 cup mozzarella cheese, part-skim
1 cup rotisserie chicken, diced
Preheat oven to 325 degrees.

Slice jalapenos lengthwise and deseed (you may want to use gloves). Set aside. In a medium mixing bowl, combine the wing sauce, bleu cheese dressing, cream cheese, mozzarella cheese and chicken.

Using a plastic sandwich bag, pipe the ingredients into the jalapenos. Place on a baking sheet, trying to keep them close together so they don’t fall over. Bake, uncovered for 20 minutes on 325° and then for an additional 30 minutes on 350°.

If preparing the mixture the night before, instead of piping the mixture from a sandwich bag, spoon into jalapenos as the mixture will be thick.

Best served immediately.
