Roasted Cauliflower

Serves 4

Ingredients
1 head cauliflower, stem trimmed
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt + 1/8 teaspoon (divided)
1/8 cup melted margarine or butter
1/8 teaspoon smoked paprika

Directions
Preheat oven to 450 degrees.

Place cauliflower head in a large stainless steel (or oven safe pan). Drizzle olive oil on top and sprinkle with kosher salt.

Place in a preheated oven for 25 minutes.

Remove from oven. Plate and pour melted margarine or butter on top. Sprinkle remaining 1/8 teaspoon salt, and paprika on top and serve hot.
